This work examines the hygienic and medicalbiological problems of carbohydrates. Despite their constant use for energy purposes in tissues and cells, when consumed in sufficient quantities, their levels in cells and tissues remain stable. Some carbohydrates have biologically active properties performing specific functions in the body. Examples include ascorbic acid with vitamin C properties, heparin preventing blood clotting, and hyaluronic acid resisting bacterial penetration through cell membranes. The primary physiological importance of carbohydrates lies in their energy-providing properties. Each gram of carbohydrate provides the body with 16.7 kJ (4 kcal) of energy.
